This salted margarita popcorn only uses four ingredients to make and is the perfect healthy snack. Popcorn gets cooked on the stovetop and then topped with lime zest. It’s fragrant and delicious!

Can you believe it’s already May?

Lot’s of things going on lately that I’m so excited to share with you.

I’ve officially signed a lease for a new apartment and will be moving in July. I can’t wait to share more about this space as summer approaches. But for now, I’m happy to announce that the new space has a great beautiful white kitchen! (Which was a big factor in apartment hunting for me.)

This month also officially marks the start of gardening season. I picked up my first box of pansies and can’t wait to start gardening and stocking up on all my favourite flowers. (Some of which include dianthus and sweet williams, which you’ve probably seen make several appearances on my smoothie bowls )

May also marks the start of more summery recipes! I’ll be working on some more fresh recipes with lots of seasonal ingredients. If you’re curious of some of the ingredients in season right now, Cookie and Kate has a great May produce guide on her blog!

This salted margarita popcorn is my Cinco de Mayo recipe contribution. (I will be working a great taco recipe for this month too, so stay tuned for that!)

If a margarita is your drink of choice, then you’ll love this popcorn. Inspired by the drink, it’s salty and limey all in one. It also only requires 4 ingredients to make: popcorn, coconut oil, sea salt and lime zest. that’s it!

Making homemade popcorn on the stovetop is also a great alternative to buying popcorn bags. Yes, it does take slightly longer to make than putting a bag in the microwave, but you can control what ingredients go in and avoid any artificial flavours and preservatives.

When making stovetop popcorn, one thing you’ll want to do is make sure to heat up the oil on a medium-high heat and get the pan nice and hot. This will make sure your popcorn pops more evenly.

Description

Popcorn with sea salt and lime zest


Ingredients

Scale
  • 2 tbsp coconut oil, melted
  • 1/3 cup popcorn kernels
  • 1/4 tsp sea salt
  • zest of one lime

Instructions

  1. Heat 1 1/2 tbsp of the coconut oil in a pot over medium-high heat.
  2. Lower the heat to medium and add in 1 kernel of popcorn. Once the kernel pops, you know the oil is hot enough to add the rest.
  3. Add the remaining kernels and cover the pot, shaking occasionally. (This will prevent the bottom kernels to burn)
  4. Once all popped, turn off the heat and add the remaining 1/2 tbsp coconut oil, sea salt and lime zest.
  5. Serve immediately.

Notes

If your kernels aren’t popping, raise the heat a couple notches.

Adjust and add more salt to your taste.
