Homemade Almond Butter Cups

Once you try making nut-butter cups at home, you’ll never go back to the store-bought ones again! These Dark Chocolate Almond Butter Cups are easy to make and come together in just 30 minutes.

I like to prepare these as a chocolatey treat to have on hand during the week, which I rotate between these Healthy Chocolate Scotcheroos and these Breakfast Cookies.

You can also make these into miniature almond butter cups by using a mini muffin pan and mini muffin liners if you’d like to make smaller bite-sized treats!

Ingredients you’ll need

  • 70% dark chocolate: Dark chocolate is high in antioxidants and lower in sugar than milk chocolate. I recommend high-quality dark chocolate which makes these cups super-rich and satisfying!
  • Coconut oil: This ingredient is used to just slightly soften the chocolate so it is easier to bite into.
  • Almond butter: Natural creamy almond butter is best, but you can use any type of almond butter or other nut butter that you love.
  • Shredded coconut: Since natural almond butter is quite runny and we’re not adding powdered sugar to this recipe, the shredded coconut will help to thicken up the almond butter mixture. You could also use coconut flour or almond flour here.
  • Maple syrup: An optional ingredient, if you want to make the almond butter filling slightly sweeter
  • Salt: Chocolate + salt is a match made in heaven! The salt helps bring out the flavour of the dark chocolate.

How to make Dark Chocolate Almond Butter Cups

Melt the chocolate in a double boiler or in the microwave on increments to prevent it from burning. Then spoon some of the chocolate into a muffin pan lined with muffin liners. Place the pan in the freezer for 5 minutes to set.

Add a spoonful of the filling into each mold, then top more chocolate to cover the filling.

Place back in the freezer to set for 15 minutes then remove and enjoy! Store these cups in a container in the fridge.

Description

These Dark Chocolate Almond Butter Cups are totally delicious for a healthy and delicious treat!


Ingredients

Scale
  • 14 oz 70% dark chocolate
  • 2 tbsp coconut oil
  • 1/2 cup almond butter
  • 3 tbsp shredded coconut 
  • 1 tbsp maple syrup (optional if you like the filling sweeter) 
  • 1/4 tsp salt

Instructions

  1. Line a muffin pan with muffin liners and set aside.
  2. Melt the dark chocolate and coconut oil together in a double boiler or in the microwave. (if  microwaving, do it in short increments to prevent burning.)
  3. Once the chocolate is melted, spoon a layer (about 1/2 tbsp-1 tbsp) to cover the bottom of the molds, then place in the freezer to set for 10 minutes.
  4. Mix the almond butter, coconut,  maple syrup and salt together, then spoon a small scoop into each mold.
  5. Spoon the top chocolate layer into each mold to cover the almond butter, then place back in the freezer for another 15 minutes to set.
  6. Store in the fridge to keep them fresh.
