Tropical coconut chia pops

These tropical coconut chia pops will be your new favourite summer treat. Loaded with blissful tropical flavours they’ll make you feel like your on a tropical Island!

If there’s one thing I love, it’s the tropics. I’ve always been drawn to anything and everything tropical. Most vacations and trips I take are too warm tropical climates, (Though don’t get me wrong, I’d love to travel to Iceland!) and most of my favourite fruits are tropical too. This includes Mango and dragonfruit.

If you haven’t had dragonfruit before, it’s a pink fruit (on the outside) that has a pretty mild taste. You can get dragonfruits that are either white on the inside or a vibrant purple. Though they aren’t super bold in taste, the colour of a purple dragonfruit is just incredible! You can often find this type of dragon fruit at your local Asian market, and the dragonfruit may have a sticker on it that says “red fruit” to distinguish it from the white fruit.

I wanted to make These tropical cocconut chia pops as a fun summer treat inspired by my trip to Bali. In Bali, I think I must have had papayas, mangos, and dragonfruits almost every day! I also tried several chia puddings there, one made with coconut milk and mango puree that especially stood out to me. All the cafes in Bali were delicious and had such an abundance of healthy food! A few notes on this recipe:

If you can’t find pink dragonfruit, or just aren’t a fan of dragonfruit in general, you can use any type of fruit you like for the top layer of these popsicles. I’d recommend raspberries or strawberries if you’re looking to get a nice colour contrast against the yellow!

If the layers feel a little thin, I like to spoon in each layer and then place the moulds in the freezer for about 20 minutes to thicken before moving on to the next layer. This isn’t necessary but will give you some more distinguished layers in your popsicles.

Description

Delicious tropical popsicles loaded with chia, coconut and tropical fruits!


Scale

Ingredients

  • 1 cup full-fat coconut milk
  • 2 tbsp chia seeds
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 large mango (or 2 small)
  • 1/4 cup orange juice
  • 1 pink dragonfruit* (see note)
  • 1/4 cup cranberry juice or apple juice

Instructions

  1. Pour the can of coconut milk into a bowl with the chia seeds, maple syrup, and vanilla extract and stir until well combined.
  2. Let sit for 20-30 minutes until the chia seeds begin to thicken.
  3. Peel and cut the mango and blend together with the orange juice until smooth. Set aside.
  4. Peel and cut the dragonfruit and blend together with the cranberry juice until smooth. Set aside.
  5. Fill your popsicle moulds altering between the dragonfruit puree, coconut chia pudding, and mango puree until the moulds are full.
  6. Place popsicle sticks in the moulds and place in the freezer overnight, or for several hours until frozen.
  7. Once frozen, I like to run my popsicle moulds under warm water for 10-20 seconds to help remove the pops.

Notes

If you’d like more distinguished layers, Place the popsicle moulds in the freezer for 15-20 minutes before pouring each new layer in.
