Thai Red Curry Coconut Soup

This easy Thai Red Curry Coconut Soup is a take on Tom Kha and a Khao Soi. This recipe comes together in under 30-minutes and is vegetarian, vegan-friendly and also gluten-free!

Ingredients 

Brown the onion, garlic and ginger in a pot

Step 1

Add spices and red curry paste and mix together

Step 2

Add vegetable broth and bring to a boil

Step 3

Season with soy sauce, coconut sugar and lime

Step 4

Let simmer on low for 15 minutes. Serve with rice noodles
