Clean-eating hazelnut truffle (copycat Ferrero Rocher)

Description

Enjoy these healthier, but just as tasty, copycat Ferrero Rocher truffles!


Ingredients

Scale
  • 160 grams roasted hazelnuts
  • 2 tbsp coca powder
  • 3 tbsp honey
  • 3 tbsp coconut oil, melted
  • 1/2 cup dark chocolate, melted
  • 1/2 cup rice crisp cereal
  • 1/4 tbsp chopped hazelnuts
  • 1 cup dark chocolate for coating

Instructions

  1. Place your hazelnuts and cocoa powder in a food processor and blend until smooth. Depending on your processor, this can take 5-10 minutes.
  2. Mix your hazelnut cocoa butter in a bowl with honey, coconut oil, melted dark chocolate, rice crisps and hazelnuts. The texture should be soft, but not liquidy.
  3. Place your bowl of filling in the fridge and allow to slightly firm up for 1-2.
  4. Remove from fridge, and roll small balls of your filling using the palm of your hands, and place onto a baking sheet.
  5. Place rolled balls into the freezer while your prepare your chocolate coating.
  6. Melt 1 cup of dark chocolate either in the microwave, or double broiler. (a bowl on top of a pot with hot water)
  7. Remove balls from freezer, and dip each one into the melted chocolate.
  8. Place truffles in the fridge to cool.
  9. Store in an air tight container for up to 2 weeks (if they last that long…)
