Description

These copycat Chewy S’mores Granola Bars have all the flavour of your favourite campfire treat: chocolate chips, toasty mini marshmallows, and a chewy oat base. They’re no-bake and ready to grab from the fridge all week long!


Ingredients

  • 1/4 cup butter or coconut oil
  • 1/4 cup honey
  • 1/4 cup coconut sugar or brown sugar
  • 1 teaspoon vanilla extract
  • 1 3/4 cups quick oats
  • 1 1/4 cups rice crisps cereal
  • 2 tablespoons ground flaxseed
  • 1 tablespoon chia seeds
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 2 tablespoons mini chocolate chips, for topping
  • 2 tablespoons mini dehydrated marshmallows, for topping

Instructions

  1. Line an 8×8 inch baking pan with parchment paper.
  2. Combine the butter, honey, and coconut sugar in a small saucepan. Bring to a light boil over medium heat, stirring occasionally, for 2 to 3 minutes. Remove from heat and stir in the vanilla.
  3. Combine the oats, rice crisps, ground flax, chia seeds, and salt in a large bowl.
  4. Pour the melted butter mixture over the dry ingredients and stir until evenly coated.
  5. Press the mixture firmly and evenly into the prepared pan, making sure to compact it very well.
  6. Sprinkle the chocolate chips and marshmallows over the top and press them in firmly.
  7. Refrigerate for 3 hours until set, then cut into bars. Store in an airtight container in the fridge.

Notes

Press the mixture VERY firmly into the pan, using all your weight, this is what holds the bars together instead of crumbling.

Let the bars set in the fridge for at least 3 hours before slicing, cutting too early causes crumbling.

Don’t reduce the honey, it’s acting as both sweetener and binder.

Line the pan with parchment and leave overhang so you can lift the whole slab out before slicing.

Storage

Store in an airtight container in the fridge for up to a week, or freeze for longer storage.
