Description

This chocolate chip cookie dough granola is easy to make at home with crunchy clusters and is ready in about 30 minutes!


Ingredients

  • 2 cups rolled oats
  • 1 tablespoon chia seeds
  • 1/4 teaspoon salt
  • 1/2 cup runny cashew butter (or peanut butter)
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/3 cup chocolate chips

Instructions

  1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, stir together the oats, chia seeds, and salt.
  3. In a separate bowl, whisk together the cashew butter, melted coconut oil, maple syrup, vanilla extract, and almond extract until smooth.
  4. Pour the wet mixture over the dry ingredients and mix until everything is evenly coated.
  5. Transfer the mixture to the baking sheet and spread it into an even layer. Press it down firmly with a spatula to help create clusters.
  6. Bake for 25 to 35 minutes, stirring once halfway through, until lightly golden.
  7. Let the granola cool completely on the pan without disturbing it. This is key for forming clusters.
  8. Once cooled, break into clusters and stir in the chocolate chips.

Notes

Use runny nut butter so the granola mixes evenly.
Press the mixture firmly to create large clusters.
Watch the bake time to prevent burning, especially at the edges.
Let the granola cool completely so it crisps up.
Enjoy on its own or served over yogurt, smoothies, or chia pudding.
