Description
These Chocolate Chunk Almond Butter Blondies are chewy and loaded with chocolate and they only take 30 minutes to make!

- 1 1/2 cups almond flour
- 3/4 cup coconut sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 3/4 cup almond butter (the runny kind)
- 1 1/2 tsp vanilla extract
- 1/2 cup chocolate chunks or chips
Instructions
- Preheat the oven to 350 degrees F and line an 8×8 inch pan with parchment paper.
- Mix the almond flour, coconut sugar, baking powder and salt together in a bowl.
- In a separate bowl, mix the eggs, almond butter and vanilla extract together.
- Add the wet ingredients to the dry ingredients and mix together until combined. (I find it easiest to mix together with your hands.)
- Add the chocolate chunks and mix together again.
- Evenly spread the mixture in the pan and bake for 18-22 minutes until golden brown on top. Let cool before cutting.
Notes
Make sure to use almond flour, not almond meal. Almond flour is more finely ground than almond meal and will give you a light texture in the blondies.
Use a natural almond butter than is the “runny” kind. Thick almond butter will be much harder to mix. I usually get the Kirkland brand almond butter from Costco.
To test your blondies for doneness, insert a toothpick into the blondies. The toothpick should come out clean if the blondies are done.
