Description

These Cottage Cheese Apple Fritters have 8 grams of protein each and come together in just 20 minutes. They’re light and fluffy and bake up right in the air-fryer!


Ingredients

Units
  • 1 cup apples, chopped very small
  • 2 tablespoons coconut sugar
  • 1 teaspoon cinnamon
  • 1 cup all-purpose flour (or gluten-free flour)
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1 cup cottage cheese
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar, for the glaze
  • 1 tablespoon milk, for the glaze

Instructions

  1. Mix the chopped apples with the coconut sugar and cinnamon.
  2. Whisk together the flour, baking powder, and salt.
  3. Add the cottage cheese, egg, and vanilla to the dry ingredients and stir to combine.
  4. Fold in the apple mixture until evenly distributed.
  5. Spray with cooking spray (optional, but helps them brown on top) then air fry at 375°F for 8 to 10 minutes, or bake at 375°F for 18 to 20 minutes.
  6. Whisk together the powdered sugar and milk for the glaze.
  7. Drizzle over the fritters and serve.

Notes

  • Don’t overmix the batter
  • Chop the apples small
  • Line the air fryer basket with parchment, or lightly spray it with oil, so the fritters don’t stick.
  • Blend the cottage cheese first for a smoother batter.
  • Let the fritters cool a couple of minutes before glazing so the glaze doesn’t melt straight off.
  • These are best enjoyed warm and fresh!

Storage & Reheating 

  • Store fritters in an airtight container in the refrigerator for up to 3 days.
  • To freeze, arrange them in a single layer on a baking sheet until solid, then transfer to a freezer bag for up to 2 months.
  • Reheat in the air fryer at 350°F for 3 to 4 minutes, or in the microwave for 20 to 30 seconds, until warmed through.
