Description

These Cottage Cheese Donut Holes are soft, pillowy and each donut has 5 grams of protein!


Ingredients

Units
  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 tsp salt
  • 2 tablespoons melted butter (for coating)
  • 3 tablespoons granulated sugar (for cinnamon sugar)
  • 1 teaspoon ground cinnamon (for cinnamon sugar)

Instructions

  1. Blend the cottage cheese until completely smooth with no lumps.
  2. Combine the blended cottage cheese with the flour, baking powder and salt in a mixing bowl, stirring just until a springy dough forms. If the dough is very wet add more flour as needed.
  3. Form the dough into a flat circle, then cut into even pieces.
  4. Roll each piece into a ball. (lightly wet your hands if needed to prevent the dough from sticking.)
  5. For the oven: Place the balls on a parchment-lined baking sheet in a single layer and bake at 350°F for 12 to 15 minutes, until lightly golden.
  6. For the air fryer: Place the balls in the air fryer basket in a single layer without overcrowding and air fry at 350°F for 7 to 9 minutes, until lightly golden.
  7. Brush the warm donut holes with melted butter, then toss in a bowl with cinnamon sugar until fully coated. (You can alternatively add the cinnamon sugar to a ziplock bag, and add each buttered donut hole to the bag and shake it to coat.)
  8. Serve immediately.

Notes

  • Blend cottage cheese well to avoid lumps in the final donut holes.
  • Adjust flour as needed: if dough is too wet, add more until springy.
  • Don’t overmix or donut holes will be dense.
  • Wet your hands when rolling to prevent sticking.
  • Start checking at 7 minutes in the air fryer; temperatures vary.
  • Swap Greek yogurt for cottage cheese in a 1:1 ratio.
