My favourite red lentil dal


Ingredients

Scale
  • 1 cup (dry) red lentils
  • 2 1/2 cups water
  • 1 medium onion, finely chopped
  • 1 tsp turmeric powder
  • 2 garlic cloves, finely chopped
  • 2 tbsp ginger, grated
  • 1 tbsp avocado oil (or vegetable oil)
  • 1 tsp cumin powder
  • salt & pepper to taste

Instructions

  1. Rinse your lentils until the water runs clear.
  2. Add your lentils to a pot with water, 1/2 of the onion, and the turmeric. Bring to a boil, then reduce to low heat, cover, and let simmer for 45 minutes. If your lentils are too thick, add a bit more water.
  3. Heat avocado oil in a pan on medium-high heat.
  4. Add the other half of the onion, garlic, and ginger, and mix together on medium for 2-3 minutes. Pour the seasoning into the pot of lentils and mix.
  5. Next add the cumin, salt and pepper. Mix well.
  6. Serve with naan bread, rice, or on its own.
