Pecan pie energy balls are the perfect easy snack!

- 1 cup pitted Medjool dates
- 1 cup pecans
- 3 tbsp unsweetened shredded coconut, plus more for rolling
- pinch of salt
- 1 tsp vanilla extract
Instructions
- Add the Medjool dates, pecans, shredded coconut, vanilla extract and salt to a food processor and pulse until it forms a sticky dough.
- Roll into balls, about one tablespoon per ball and then roll into a plate of shredded coconut to top if desired.
- Store in the fridge in an airtight container.
Notes
These energy balls must be stored in the fridge or freezer.
