Description

This bowl of steel cut oats with maple fried bananas is the perfect warming and cozy breakfast recipe!


Ingredients

  • 1 1/2 cups water
  • 1/2 cup steel cut oats (gluten-free if needed)
  • 1/4 cup almond milk (or other plant-based milk)
  • 1/4 tsp cinnamon

Instructions

  1. Bring 1 1/2 cups of water to a boil in a pot. Add the oats, reduce heat to low and cover and let simmer for 12-15 minutes. (*May vary depending on your oats, check your packaging for directions)
  2. Remove from heat and stir in the almond milk and cinnamon.
  3. While the oats are cooking, heat the coconut oil in a small skillet on medium-high heat. Add the maple syrup and salt, and then place the bananas in the pan.
  4. Let cook on each side for 2-3 minutes, until caramelized and tender.
  5. Pour the oatmeal into a bowl and top with the maple fried bananas.
  6. Next add the almond butter, hazelnuts, hemp seeds, cinnamon, and maple syrup on top.
  7. Serve immediately.
