Description

These Chocolate Chia Jam Bites have a soft, jammy centre and dark chocolate shell. They’re made with just 4 ingredients and are the perfect make-ahead treat to keep stashed in the freezer.


Ingredients

  • 2 cups raspberries, fresh or frozen
  • 2 tablespoons chia seeds
  • 1-2 tablespoons maple syrup (optional)
  • 1 cup dark chocolate (I recommend 70%)

Instructions

  1. Add raspberries and chia seeds to a small pot over medium heat. Cook for about 10 minutes, stirring occasionally, until thick and jammy. Taste and sweeten with maple syrup if needed.
  2. Let the jam cool for 10 minutes to thicken, then spoon small discs of jam onto a parchment-lined baking sheet. Freeze for at least 2 hours or until the jam disks are frozen.
  3. Melt the chocolate then working quickly, dip the frozen discs into the melted dark chocolate, letting any excess drip off, then return to the baking sheet and freeze for 15 minutes to set.
  4. Let the bites thaw for 5 minutes before eating so the centre softens and gets jammy.

Notes

Make sure the jam disks are completely frozen before dipping in chocolate. 
Use parchment paper or a silicone mat so the bites release easily.
Keep the jam discs small for easier dipping and better texture.
Store in the freezer.
