Description

This Cottage Cheese Brownie Batter is rich, fudgy, and tastes just like real brownie batter, but it’s packed with protein and comes together in just 10 minutes with no baking required!


Ingredients

  • 1 cup cottage cheese (thick)
  • 2 tablespoons maple syrup
  • 1 tablespoon monk fruit sweetener (optional, for additional sweetness)
  • 1 teaspoon vanilla extract
  • 1/2 cup oat flour, plus more if needed
  • 3 tablespoons cocoa powder (or swap 2 tablespoons for chocolate protein powder)
  • Pinch of salt
  • 1/4 cup chocolate chips

Instructions

  1. Blend the cottage cheese in a small blender or food processor until completely smooth and creamy.
  2. Add the maple syrup, monk fruit sweetener, and vanilla extract to the blended cottage cheese, and mix to combine.
  3. Add the oat flour, cocoa powder, salt, and chocolate chips, and mix together, adding more oat flour 1 tablespoon at a time if the batter feels too loose.
  4. Chill in the fridge for 30 minutes, or enjoy right away.

Notes

  • Store in the fridge up to 5 days.
  • For an extra protein boost, swap 2 tablespoons of the cocoa powder for chocolate protein powder.
  • Adjust the maple syrup and monk fruit to taste. You can use just maple syrup or your sweetener of choice.
  • Start with 1/2 cup oat flour and add more as needed to thicken the batter.
  • Strain the cottage cheese with a cheesecloth first if it seems too liquidy.
