If you’ve made my Cottage Cheese Cookie Dough you already know how this works. Blending cottage cheese until it’s completely smooth turns it into the creamiest base and once you mix in cocoa powder and chocolate chips, it tastes exactly like brownie batter that can be eaten straight from the bowl.
I tested this recipe a few different variations of this recipe before finally landing on this version. I tried it with both almond flour and oat flour, and while almond flour works if you want a grain-free option, it does come out a bit more grainy in texture, so oat flour is my go-to for the smoothest, most true to brownie batter result.
I also tested it with both maple syrup and honey as the sweetener. Maple syrup is my preference since it gives the most well rounded flavour. I like adding a bit of monk fruit sweetener too for some extra sweetness without adding more calories.
I get so many requests for chocolate versions of my protein-packed snacks, and this is one of my favourites! It has the same deep, fudgy flavour as my Chocolate Chia Pudding or Chocolate Overnight Oats, but with a thicker, spoonable, cookie dough like texture.
Key Ingredients & Substitutions

Cottage cheese: Use a thick cottage cheese for the best result. Blending it completely smooth is the key step that makes it smooth and creates that brownie batter texture. This is the same method I use in my Cottage Cheese Chia Pudding. Thick Greek yogurt like I use in my Greek Yogurt Chocolate Mousse makes a great substitute.
Cocoa powder: This is where the fudgy chocolate flavour comes from. You can swap 2 tablespoons of the cocoa powder for chocolate protein powder if you want an extra protein boost. If you love cocoa flavour also try my Greek Yogurt Tiramisu topped with cocoa powder for another healthy high-protein treat.
Oat flour: Start with just 1/2 cup and add more, a tablespoon at a time, until the batter reaches a thick, dough like consistency. Oat flour is gluten-free and completely safe to eat raw, unlike regular all-purpose flour. You can substitute with almond flour for a grain-free option. (Though the batter will come out slightly more grainy.)
How To Make Cottage Cheese Brownie Batter

Step 1: Add the blended cottage cheese to a bowl with maple syrup and vanilla.

How To Store
Store the brownie batter in an airtight container in the refrigerator for up to 5 days. You can also portion it into small containers ahead of time for easy grab and go snacks throughout the week.

- Strain watery cottage cheese: If your cottage cheese is on the thinner side, strain it through a cheesecloth first so the batter doesn’t turn out too wet. Use any extra cottage cheese to make a batch of my Cottage Cheese Banana Muffins or my Jalapeno Cheddar Cottage Cheese Biscuits.
- Blend well: Take the time to blend the cottage cheese completely smooth, this is what gives the final batter its creamy brownie batter like texture rather than a grainy one.
- Start with less oat flour: Begin with 1/2 cup of oat flour and only add more if the batter feels too loose. It’s easier to thicken than to thin back out.
- Let it chill: While it’s totally fine to eat right away, chilling it in the fridge for 30 minutes lets the oat flour fully hydrate for a thicker, fudgier texture.
- Taste as you sweeten: Add the maple syrup gradually and taste along the way. Add more as needed or sweeten additionally with monk fruit sweetener or your sweetener of choice.
