They use that same creamy Greek yogurt base thickened with a touch of vanilla pudding mix and cream cheese with layers of fresh strawberries and nilla wafers. It’s similar to my High Protein Banana Pudding but for strawberry lovers!

Key Ingredients & Substitutions

Greek yogurt: I use 2% plain Greek yogurt for a richer taste which I also love using in my Greek Yogurt Chocolate Mousse, but any percentage you like works. (Just make sure to use very THICK yogurt!) You can also swap in blended cottage cheese, like I do in my Protein Chia Pudding. (just also make sure it’s a thick variety for the best texture.)

Instant vanilla pudding mix: This is what thickens the yogurt into that rich, cheesecake-like filling. Make sure the box says “instant,” not “cook and serve.” The classic Jell-O brand works great, or look for a sugar-free option like Simply Desserts if you prefer.

Strawberries: Use fresh ripe strawberries. Frozen can be substituted if needed but it really wont give the same result! (Frozen also tends to be more watery.)

Nilla wafers: These soften into cake-like layers as the jars chill, similar to a graham cracker crust. Graham crackers or gluten-free vanilla cookies both make easy swaps.

How To Make A Greek Yogurt Strawberry Pudding Jar

How To Store

Store these strawberry cheesecake jars covered in the refrigerator for up to 3 days. The Nilla wafers will continue to soften as they sit, so if you like a bit of crunch, enjoy them within the first day or add a few extra wafers on top just before serving.

  • Use instant pudding mix: Cook-and-serve pudding won’t thicken the yogurt properly. Double check the box says “instant.”
  • Let the cream cheese soften: Room temperature cream cheese blends into the yogurt mixture much more smoothly than cold.
  • Taste as you sweeten: Start with 1 tablespoon of maple syrup, then taste and add more if needed.
  • Chill for the best texture: These are good right away if you like a crunchy cookie layer, but even better after at least 2 hours in the fridge once the wafers soften.
  • Try macerating the strawberries: Chop them into small pieces and mix with 1 teaspoon of sugar or maple syrup. Let sit for 10 minutes. This breaks down the strawberries and will intensify their flavour.
