Notes From My Kitchen

Cottage cheese has quickly become one of my favourite baking ingredients. After seeing how much you all loved my Cottage Cheese Donut Holes and Cottage Cheese Cinnamon Rolls, I figured the next treat I had to make was something chocolatey and decadent.

This entire recipe comes together in a small blender or food processor, which turns the batter silky and smooth. The outside is fudgy and almost brownie-like, the middle is soft and moussy, and when you dig in with your spoon you hit a gooey pocket of melted chocolate.

This one took a few rounds of testing. My first version used more flour and came out too dense, more like a regular muffin than a lava cake. I also tried it with just 2 tbsp of sweetener, but cocoa powder can be quite bitter on its own and it wasn’t sweet enough. A total of 4 tbsp of sweetener was the sweet spot, and I’ve included an option to use sugar-free sweetener if you want to keep the sugar to a minimum.

Recipe Highlights

  • High in protein: Each ramekin has 14 grams of protein.
  • Fudgy and moussy texture: The blended cottage cheese keeps the cake soft and creamy.
  • Quick & easy: It’s mixed in one blender and baked in under 15 minutes, so it’s perfect for a last minute dessert. For another quick dessert also make my Greek Yogurt Chocolate Mousse.
  • Made for two: The recipe makes two ramekins, ideal for date night or sharing with a friend…or eating the whole batch yourself!

Key Ingredients

Ingredients for cottage cheese chocolate lava cake.
  • Cottage cheese: I use 2% cottage cheese, which I recommend over 0%. Fat in this recipe will help give a proper texture. Plain 2-5% Greek yogurt works great as a swap. Use extra cottage cheese to make my Cottage Cheese Brownie Batter or Cottage Cheese Banana Muffins.
  • Flour: I use half all-purpose and half almond flour. The almond flour keeps the cake light without being too dense. I’ve also made this by swapping all-purpose flour for oat flour which works well too!
  • Sweetener: I use a mix of maple syrup and coconut sugar. For a lower sugar version, replace the coconut sugar with monk fruit sweetener or erythritol.
  • Oil: You can use any neutral tasting oil like avocado oil, coconut oil or olive oil or substitute with butter that’s been melted and cooled.

Jess’s Tips

  • Blend until smooth: Make sure the cottage cheese and egg are completely smooth so there are no curds in the finished cake.
  • Use room temperature ingredients: Cold cottage cheese and eggs can make coconut oil or melted butter firm up, so let them sit out for a few minutes first.
  • Don’t overbake: Start checking at 8 minutes. The centre should still look soft and jiggle slightly when you shake the ramekin.
  • Serve with toppings: Top with fresh berries, a dusting of powdered sugar or a scoop of vanilla Greek yogurt.
  • Make them gluten-free: Swap the flour for a 1-1 gluten-free flour or oat flour like I use in my Oat Flour Cottage Cheese Pancakes.

Frequently Asked Questions

Can you taste the cottage cheese in the lava cake?

Not at all. Once it’s blended smooth, the cottage cheese melts into the chocolate and just adds creaminess without any taste.

Why isn’t my lava cake molten in the middle?

It was most likely baked a little too long. Every oven is different, so start checking at 8 minutes and pull them when the edges are set but the centre still wobbles.

Description

These Cottage Cheese Lava Cakes are rich and fudgy with a gooey, molten chocolate centr They come together in under 30 minutes with 14 grams of protein each.

Ingredients

Units
  • 1/2 cup cottage cheese
  • 1 large egg
  • 2 tablespoons maple syrup
  • 2 tablespoons coconut sugar
  • 1 tablespoon oil (like coconut or avocado)
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 2 tablespoons almond flour
  • 3 tablespoons cocoa powder, plus more for dusting
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 2 squares dark chocolate (or 2 tablespoons chocolate chips)

Instructions

  1. Preheat the oven to 425°F. Grease two 4-ounce ramekins or one 8-ounce ramekin with butter and dust with cocoa powder, tapping out the excess.
  2. Add all the ingredients to a small blender or food processor and blend just until combined.
  3. Divide half the batter between the ramekins or ramekin. Press a chocolate square (or 1 tablespoon chocolate chips) into the centre of each, then cover with the remaining batter.
  4. Place the ramekins on a baking sheet and bake for 8 to 12 minutes, until the edges are set and the centres still look slightly soft and jiggle when you shake the pan.
  5. Serve while warm (being careful because the ramekin will be hot!) and optionally top with a dusting of powdered sugar.

Notes

  • Blend the cottage cheese and egg until completely smooth so there are no curds in the finished cake.
  • Use room temperature cottage cheese and eggs so the melted butter doesn’t firm up.
  • Start checking at 8 minutes and pull them when the centre still looks soft and jiggles slightly.
  • Top with fresh berries, a dusting of powdered sugar or a scoop of vanilla Greek yogurt.
  • For a gluten-free version, swap the all-purpose flour for a 1:1 gluten-free flour or oat flour
  • These are best enjoyed fresh, but leftovers keep covered in the fridge for up to 2 days and can be warmed in the microwave for 20 to 30 seconds.
