Description

These Key Lime Pie Pudding Jars With Greek Yogurt are thick, creamy, and taste just like key lime pie. They come together in just 10 minutes and have 12g protein per serving. 


Ingredients

Units
  • 1 cup plain Greek yogurt (I use 2%)
  • 1 tablespoon instant vanilla pudding mix
  • 2 tablespoons lime juice, freshly squeezed
  • Zest of 2 limes
  • 1 to 2 tablespoons maple syrup, to taste
  • 1 teaspoon vanilla extract
  • 10 to 12 Nilla wafers

Instructions

  1. Mix together the Greek yogurt, vanilla pudding mix, lime juice, lime zest, maple syrup, and vanilla extract in a medium bowl until well combined.
  2. Add a layer of the lime yogurt mixture to the bottom of two jars, then top with a layer of Nilla wafers.
  3. Repeat the layers, ending with the yogurt mixture on top.
  4. Cover and chill in the fridge for at least 2 hours. (If you prefer crunchy cookies you can eat these right away)

Notes

  • Use instant vanilla pudding mix, not cook-and-serve.
  • Start with 1 tbsp maple syrup and adjust to taste depending on how tart your limes are.
  • Graham crackers or gluten-free vanilla cookies can be swapped for the Nilla wafers.
  • Store covered in the fridge for up to 4 days.
