Mango Chia Pudding

A chia pudding made with fresh mangos, coconut milk and chia seeds!


  • 1/4 cup chia seeds
  • 1 cup coconut milk (light or full-fat both work) 
  • 2 Altaufo mangos, peeled and cut into pieces 
  • 1 tbsp agave
  • 1/2 tsp vanilla extract 


  1. Place the coconut milk, mangos, agave and vanilla extract together in a blender and blend until smooth. 
  2. Pour the mixture into a bowl with chia seeds and whisk together for 1-2 minutes until everything is well combined.
  3. Cover and place in the fridge for a minimum of 1 hour, or overnight for the chia pudding to set. 
  4. Serve with fresh mango or your favourite fruits. 


Use RIPE Ataulfo mangos. They should be a bit soft to the touch and yellow. If your mangos are a bit green and still hard, they’re not ready. Ripe mangos are key to creating a really sweet and flavourful pudding.

Depending on the size of the mangos you use and the brand of coconut milk, you chia pudding can come out slightly thicker or thinner. If your pudding is too thick, add a bit more coconut milk and mix. (if it’s too thin, add a few more chia seeds.)

Make sure to mix all the ingredients together well to avoid the chia seeds from clumping.
