Description

A chia pudding made with fresh mangos, coconut milk and chia seeds!


Ingredients

Units Scale
  • 1/4 cup chia seeds
  • 1 cup canned coconut milk (full-fat or light both work)
  • 1 large ataulfo mango, peeled and cut into pieces (approx 1 cup)
  • 1 tbsp maple syrup, honey or agave(optional)
  • 1/2 tsp vanilla extract

Instructions

  1. Place the coconut milk, mangos, syrup and vanilla extract together in a blender and blend until smooth.ย 
  2. Pour the mixture into a bowl with chia seeds and whisk together for 1-2 minutes until everything is well combined.
  3. Cover and place in the fridge for a minimum of 3 hour, or overnight for the chia pudding to set.ย 
  4. Serve with fresh mango or your favourite fruits.ย 

Notes

I recommend ataulfo mangos but any type of mango works.

You can use fresh or frozen mangos in this recipe.

If your mango is very sweet, feel free to omit the maple syrup or honey

Store in the fridge in an airtight container up to 5 days.
