Made with 6 simple ingredients this chia pudding is creamy and tastes just like an orange creamsicle!

- 4 mandarins, peeled
- 1/2 cup coconut milk (from a can, full-fat or light both work)
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 4 tbsp chia seeds
- flaked coconut to top
Instructions
- Blend the mandarins, coconut milk, vanilla extract and maple syrup together in a high-speed blender until smooth and creamy.
- Add to a mixing bowl with the chia seeds and mix together. Let sit for 5 minutes then give it another mix until well combined.
- Cover the bowl and place in the fridge for at least 1 hour, or overnight.
- Scoop the chia pudding into bowls or small jars and top with shredded coconut.
Notes
I love the taste of mandarins, but you can use any orange you love. If using a larger orange, you only need 1 orange for this recipe. If you don’t have fresh oranges, you can use 1/2 cup of your favourite orange juice. If your chia pudding comes out a bit liquidy, add an extra couple tsp of chia seeds and let sit to soak up the liquid. If your chia pudding is too thick for your liking, add a bit more coconut milk.
