Description

This Orange Creamsicle Chia Pudding is made with simple ingredients and tastes like the nostalgic treat!


Ingredients

  • 1 1/2 cups orange segments (navel, cara cara, madarines, blood oranges all work well) 
  • 2 tsp orange zest
  • 1/2 cup full-fat coconut milk 
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup chia seeds


Instructions

  1. Add the orange segments, orange zest, coconut milk, maple syrup, and vanilla extract to a blender. Blend until completely smooth.
  2. Pour the blended mixture into a mixing bowl or jar and whisk in the chia seeds until evenly combined.
  3. Let the mixture sit for 5 minutes, then stir again to prevent the chia seeds from clumping.
  4. Cover and refrigerate for at least 2 hours, or overnight.
  5. Give the pudding a stir before serving. Enjoy as is, or top with fresh orange slices, coconut flakes, or granola.

Notes

  • Cara Cara, navel, mandarins, or blood oranges give the pudding a rich orange colour.
  • Substitute for freshly squeezed orange juice if needed.
  • Blend the orange mixture well before adding chia seeds.
  • For best texture, let the pudding sit in the fridge overnight.
  • Store in the fridge for up to 4 days.
