My all-time favourite maple pecan granola recipe loaded with oats, maple syrup and pecans!

- 2 cups rolled oats
- 1 cup rice crisps or puffed quinoa
- 3/4 cup pecans, chopped
- 2 tbsp chia seeds
- 1/2 tsp cinnamon
- 1/2 tsp sea salt
- 1/4 cup coconut oil, melted
- 1/3 cup maple syrup
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 300 degrees F and line a baking sheet with parchment paper
- In a large bowl, mix together the oats, rice crisps, pecans, chia seeds, cinnamon and salt.
- In a separate bowl, mix together the coconut oil, maple syrup, and vanilla extract.
- Pour the wet mixture into the dry ingredients and mix well until it’s evenly coated.
- Spread your granola out evenly onto the baking sheet lined with parchment paper, and bake for 25-30 minutes, or until golden brown, flipping the pan halfway through.
- Let cool on the countertop completely before storing it.
Notes
- Press the granola firmly into the pan and let cool completely to get granola clusters.
- Store in a large jar or container at room temperature for up to three weeks.
