Description

Ultimate breakfast cookies


Ingredients

Scale
  • 1 cup almonds
  • 1 1/2 cups oats
  • 1/2 cup flax meal
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup almond butter
  • 3 tbsp coconut oil, melted
  • 1/3 cup maple syrup
  • 2 tsp vanilla extract
  • 1 egg (or flax egg)
  • 1 cup mix: raisins, dried cherries, chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line a cookie sheet with parchment paper.
  3. In a food processor, pulse your almonds until fine. Next add your oats and pulse together until fine.
  4. In a large bowl, add your almond/oat mixture with flax meal, cinnamon, baking soda, baking powder, and salt.
  5. In a separate bowl, mix together the almond butter, coconut oil, maple syrup, vanilla extract and egg until smooth.
  6. Add your wet ingredients to your dry ingredients and mix until combined.
  7. Mix in your dried fruits and chocolate chips.
  8. Form dough into round balls with your hand, and place on your baking sheet.
  9. Bake for 10-12 minutes, or until golden brown on top
