Description
Ultimate breakfast cookies
Ingredients
- 1 cup almonds
- 1 1/2 cups oats
- 1/2 cup flax meal
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup almond butter
- 3 tbsp coconut oil, melted
- 1/3 cup maple syrup
- 2 tsp vanilla extract
- 1 egg (or flax egg)
- 1 cup mix: raisins, dried cherries, chocolate chips
Instructions
- Preheat the oven to 350 degrees.
- Line a cookie sheet with parchment paper.
- In a food processor, pulse your almonds until fine. Next add your oats and pulse together until fine.
- In a large bowl, add your almond/oat mixture with flax meal, cinnamon, baking soda, baking powder, and salt.
- In a separate bowl, mix together the almond butter, coconut oil, maple syrup, vanilla extract and egg until smooth.
- Add your wet ingredients to your dry ingredients and mix until combined.
- Mix in your dried fruits and chocolate chips.
- Form dough into round balls with your hand, and place on your baking sheet.
- Bake for 10-12 minutes, or until golden brown on top

I brought these cookies on my son’s 4-day hockey tournament. I was (barely) sleeping on my brother’s couch and I honestly think it was these cookies that kept my energy up the entire weekend! Amazing!

I am allergic to tree nuts, can ย butter be substituted for the nut butter.

Should the almonds be unsalted? I have salted almonds. Should I leave out the additional salt if I use salted almonds? Can’t wait to try these!
