Vegan Pumpkin Spice Granola
This vegan pumpkin spice granola is the perfect breakfast for Fall! It’s filled with warming spices, oats, nuts and pumpkin seeds. Enjoy it on its own or on top of your favourite yogurts, smoothies or oatmeal!
Granola is a staple in my kitchen. And I’m talking I always have to have granola on hand kinda staple. So whenever my granola jar is running low (which is often) you can find me in the kitchen ready to whip up another batch.
Granola is one of those that many people buy at the grocery store, but once you make it at home…omg your life will be changed!
Not only is granola so easy to make, (like stupid easy) it’s way healthier to make it homemade and can be made in one bowl. It requires that little effort, so no excuses not to make it!
Since I make granola so often, one thing that is a must for me is to switch up the flavours and ingredients seasonally. Anything from blueberry vanilla granola for spring, to apple pie granola for September.
So naturally, for Fall I just had to make a vegan pumpkin spice granola. Because really what’s Fall without pumpkin spice EVERYTHING?
A few notes on this recipe:
One thing I love about this vegan pumpkin spice granola is that you can mix up the ingredients however you like! For this specific recipe, I like to do a pix of pumpkin seeds, (keeping on the whole pumpkin theme…) pecans, (Fall vibes all around!) and almonds. (just cuz, yum.) If there are any other nuts or seeds you enjoy in your granola feel free to add them in! You can also add in any dried fruit you like. Just make sure to add dried fruit in after the granola has come out of the oven.
You can use either store-bought pumpkin spice blend or make a homemade pumpkin spice blend. To make a homemade blend you can find a great recipe here.
For the best results, make sure to use whole oats (NOT quick oats) and a good quality maple syrup. You can also substitute the coconut oil for any neutral tasting oil you prefer.
Now let’s talk about some ways you can enjoy this granola:
- On top of oatmeal
- On a smoothie bowl
- In a bowl with some almond milk
- On your favourite yogurt
- By the handful straight from the jar
The last way is my personal favourite;)
Maple, spice and everything nice! This vegan pumpkin spice granola is delicious as a topping or on its own!
- Preheat the oven to 300 degrees F and line a baking sheet with parchment paper.
- Mix all the ingredients together in a large bowl.
- Spread the granola mixture evenly on the baking sheet and bake for 30-40 minutes, mixing halfway through, until golden brown.
- Store in a jar or container in your pantry
