What are superfoods anyways?

I’m a big fan of “superfoods.” They can be enjoyed in a variety of ways from granola bars, to salads. But what exactly are these superfoods?

Besides being a trendy phrase, superfoods are basically just nutritiously dense foods, that are usually plant-based. Think leafy green, fruits rich in vitamins, nuts, seeds, and whole grains. Incorporating these types of foods into your diet is a great way to make sure you’re getting all the nutrients and vitamins you need in your day.

Ingredients

  • Goji berries: these are a tiny red fruit packed with antioxidants. They have a taste similar to a tart cherry or cranberry.
  • Dried cranberries: opt for no sugar-added dried cranberries if possible.
  • Medjool dates: make sure to use medjool dates here! These are big, sticky and have a caramel-like flavour.
  • Quinoa: did you know quinoa is actually a seed? It’s packed with nutrients, fibre and is a great source of protein!
  • Almonds: any nut here will do. I like to use roasted almonds
  • Pistachios: these are delicious in the bars, again they can be replaced with any nut.
  • Hemp seeds: they’re rich in protein and great to add into bars!
  • Chia seeds: you know I love using them in recipes!
  • Vanilla: Pure vanilla extract is best here.
  • 70% dark chocolate: to make the chocolate topping

Step by step instruction

Add all dried fruits, nuts, seeds and vanilla extract to a food processor and pulse until it forms a dough.

Scoop into a loaf pan and spread out evenly, pressing the dough into the pan. Then melt the chocolate and pour it on top of the bars.

Place in the fridge to set for at least 2 hours. Store the bars in the fridge.

Tips for making this recipe perfectly

  • If your dates are dry, soak them in warm water for 5 minutes then drain and proceed with the recipe. Fresh Medjool dates should be soft and sticky. This is what helps bind the bars together so everything sticks.
  • Goji berries have a unique taste that some people may find slightly bitter. If you don’t love the taste of goji berries, you can cut the amount in the recipe in half, only sprinkle them on top, or leave them out entirely.
  • This recipe is very versatile and can be adjusted as needed. If there are any nuts or seeds you don’t have on hand or don’t like, you can replace them with equal amounts of any other nut or seed.
  • What to do if your dough is crumbly: add more dates and dried fruit and pulse together again.

Description

These Superfood Snack Bites are packed with healthy ingredients and are naturally gluten-free, vegan and refined sugar-free. They make the perfect energizing snack for any time of day!


Ingredients

Scale
  • 3/4 cup Medjool dates (pits removed) 
  • 1/4 cup no sugar added dried cranberries
  • 1/4 cup goji berries
  • 1/4 cup uncooked quinoa 
  • 1/2 cup roasted almonds 
  • 1/2 cup pistachios 
  • 2 tbsp hemp seeds
  • 1 tbsp chia seeds
  • 1/2 tsp vanilla extract
  • 4 oz 70% dark chocolate

Instructions

  1. Add the dates, cranberries, goji berries, quinoa, almonds, pistachios, hemp seeds, chia seeds and vanilla extract to a food processor. Pulse until the mixture is a sticky dough. 
  2. Transfer the dough into an 8×4 inch loaf pan lined with parchment paper and press it down into the pan. 
  3. Melt the dark chocolate and pour on top of the pan, spreading evenly. Optionally sprinkle some more nuts and seeds on top of the bites to decorate. 
  4. Place in the fridge for a minimum of 2 hours for the bites to set. 
  5. Cut into even squares and enjoy. 

Notes

How to store: in the fridge in a sealed container for up to 2 weeks, or in the freezer for up to 3 months. These can be enjoyed straight out of the fridge or freezer. 

What to do if your dates are dry: soak them in hot water for 5 minutes, then drain and proceed with the recipe. 

What to do if your dough is crumbly: add more dates and dried fruit and pulse together again.
