I’m currently writing this blog post sitting outside my hotel room in Puerto Rico looking out at the ocean. I figured there’d be no better time to get this post written than now when I’m feeling really tropically inspired! I’m only here for 3 nights on a quick culinary trip, but I’ll take as much of the tropics as I can get!
So when I get back home, you’ll probably see me on my Instagram stories making some of these healthy papaya mojito smoothies for a snack!
This smoothie is a really fun summery treat, but it’s also filled with some amazing health benefits. Papaya offers a really great nutrition profile, loaded with tons of vitamins and digestive enzymes that can help with bloating and inflammation in the body. This papaya mojito smoothie also features mint as a key ingredient, which also offers amazing benefits for bloating, indigestion.
If you’d like to enjoy this smoothie as a more substantial breakfast, feel free to add in some ingredients such as oats, buckwheat groats, protein powders, or chia seeds! (I often like to blend in 2-3 tbsp of buckwheat groats into my morning smoothies)
- 1 cup papaya
- ½ banana, frozen
- juice of 2 limes
- 4-8 mint leaves
- ½ cup almond milk (or other plant based milk)
- 1 tbsp hemp hearts
- 1 handful ice
- Blend the papaya, banana, lime juice, mint leaves, and almond milk together in a high speed blender.
- Pour into your glass and garnish with hemp hearts.
*If you don’t like banana you can simply replace with more papaya, or any other fruit of choice.
