Step 1

Add the butter and powdered sugar to a large mixing bowl and cream together with a hand mixer, for about 1-2 minutes. Then add the vanilla extract and almond extract and continue to cream together for an additional minute until the mixture is light and fluffy.

Step 2

Add the almond flour and salt to the bowl and gently fold together with a spatula. You can also mix the dough together with your hands.

Step 3

Roll into even balls, about 1/2 tablespoon each and bake in the oven at 325 degrees F for about 12-15 minutes.

Step 4

Let the cookies cool for 5 minutes, then dip into the remaining powdered sugar. Let the cookies cook for another 10 minutes and then dip them again into the powdered sugar.

Ingredients

  • 1/3 cup butter, softened to room temperature
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 cups almond flour
  • 1/4 tsp salt
  • Powdered sugar for rolling

Instructions

  • Preheat the oven to 325 degrees F and line a cookie sheet with parchment paper
  • In a mixing bowl cream together the butter and powdered sugar together for 1-2 minutes with a hand mixer until light and fluffy. (You can alternatively use a stand mixer.)
  • Add the vanilla and almond extract and mix together for another 30 seconds.
  • Gradually mix in the almond flour and salt using a large spoon or spatula until the dough comes together.
  • Roll into balls, about a half tablespoon per ball and place them on the cookie sheet about an inch apart.
  • Bake the cookies for 12-15 minutes, or until they are just starting to turn golden
  • Allow the cookies to cool on the baking sheet for about 5 minutes, then gently roll them in additional powdered sugar while they are still warm. Once they have cooled completely, roll them in powdered sugar again for a snowy effect.
