No-bake chocolate chip almond cookies
These no-bake chocolate chip almond cookies are easy to make, healthy, gluten-free, vegan, and refined sugar-free! They’ll become your new favourite clean eating treat!

I love sweets. In fact, I don’t think I can go a day without having some sort of sweet treat, whether it be some granola, chocolate, or one of these no-bake chocolate chip almond cookies. I know there is a lot of talk about how sugar is “bad for you,” but remember that not all sugars are created equal, and part of a healthy and balanced lifestyle includes treating yourself to things you enjoy.
And as far as sugar goes, these cookies are a really low sugar option for a healthy and nourishing treat! In fact I’m not even sure if I’d refer to these cookies as a treat, since they’re also a great healthy breakfast option, or fuel for that post-gym snack!
You can also make these cookies into more of a bar, by just pressing the dough into a pan and cutting them into squares, or make them into energy bites, by rolling the dough into balls. This recipe is really versatile so feel free to play around with it, or add in any flavours, nuts, dried fruits, or anything else you enjoy in your cookies!

Description
No-bake chocolate chip almond cookies
Ingredients

- 1 cup almond flour
- 1/2 cup oats
- 1 tbsp almond butter
- 1 tbsp coconut oil, melted
- 3 tbsp brown rice syrup (or maple syrup)
- pinch of salt
- 1/4 cup chocolate chips
Instructions
- Place all ingredients except the chocolate chips together in a food processor. Blend until it forms a dough. Add the chocolate chips and pulse a few times to slightly crush them and mix them into the dough.
- Place dough onto a large piece of parchment paper on the counter. Flatten to dough with your hands, then place a second piece of parchment paper on top, and use a rolling pin to roll the dough out, about 1/2 inch thick. (The parchment paper on top will keep it from sticking to the rolling pin.)
- Using a round cookie cutter, or a cup, cut the dough into cookies. Place in the fridge to firm up.
- Repeat the last 2 steps as needed to get as many cookies out of your dough as possible.
