Ingredients
Egg Bites
- 1 cup egg whites (I use from an egg white carton)
- 3/4 cup cottage cheese
- 3/4 cup shredded cheese
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
Filling:
- 1/3 cup diced roasted red pepper, (can sub fresh red pepper)
- 2 cups chopped spinach
- 1/2 tbsp avocado oil
Instructions
- Preheat the oven to 350 degrees and spray a muffin pan with cooking spray.
- Blend the egg whites, cottage cheese and shredded cheese until smooth.
- Heat the avocado oil in a pan on medium-high and add the spinach. Sautee for 2-3 minutes until the spinach is wilted.
- Add some of the red pepper and spinach to each muffin cup, then pour the egg white mixture filling each cup 3/4 of the way full.
- Boil some water and fill a baking dish with the boiling water. Place it on the bottom rack of the oven. (This step is optional, but will create a “sous-vide” effect to steam the egg bites.)
- Place the muffin tin on the top rack of the oven and bake for 30-35 minutes until golden brown on the edges.
- Let cool then use a knife to separate the egg bites from the edges and remove from the pan.

If using a silicon muffin pan, place the pan onto a baking sheet.
