These Chocolate Chunk Almond Butter Blondies are paleo, grain-free and gluten-free. They come together in just 30 minutes and are rich and chewy and packed with big chunks of chocolate!

I know most of us are probably more familiar with chocolate brownies, but blondies are like the vanilla flavour cousin of brownies and are so darn good. If you’re a fan of cookie dough, you’re gonna be obsessed with these Almond Butter Blondies. They basically taste like a chewy chocolate chip cookie in bar form.

Ingredients you’ll need

  • Almond flour-these grain-free blondies are made with almond flour instead of regular flour. The almond flour also gives these blondies some more protein and healthy fats.
  • Coconut sugar-this is also sometimes called palm sugar. Coconut sugar is a paleo-friendly sugar option that has a lower glycemic index that white sugar, meaning it won’t spike your blood glucose as much as white sugar does.
  • Baking powder-to help the blondies rise.
  • Salt-just a pinch to help balance out the sweetness and bring out the flavours in the blondies.
  • Eggs-2 large eggs.
  • Almond butter-make sure to use the runny kind of almond butter for best results. This will be a lot easier to mix than almond butter that is too thick.
  • Vanilla extract-for flavour
  • Chocolate-any kind you like. Chocolate chips, chocolate chunks or even a cut up dark chocolate bar all work.

How to make Almond Butter Bondies

Mix the dry ingredients together in a bowl, and the wet ingredients together in another bowl.

Mix the wet and dry ingredients together until combined, then mix in the chocolate chunks.

Spread the mixture into an 8×8 inch baking pan and bake in the oven at 350 degrees F for 18-22 minutes. Let cool on the counter before cutting.

Expert tips

  • Make sure to use almond flour, not almond meal. Almond flour is more finely ground than almond meal and will give you a light texture in the blondies.
  • Use a natural almond butter than is the “runny” kind. Thick almond butter will be much harder to mix. I usually get the Kirkland brand almond butter from Costco.
  • To test your blondies for doneness, insert a toothpick into the blondies. The toothpick should come out clean if the blondies are done.

Storage tips

  • Counter: Store in an air-tight container on the counter for up to 5 days.
  • Freezer: Store in the freezer in a sealed container for up to 2 months. Defrost naturally on the countertop.

  1. Preheat the oven to 350 degrees F and line an 8×8 inch pan with parchment paper.
  2. Mix the almond flour, coconut sugar, baking powder and salt together in a bowl.
  3. In a separate bowl, mix the eggs, almond butter and vanilla extract together.
  4. Add the wet ingredients to the dry ingredients and mix together until combined. (I find it easiest to mix together with your hands.)
  5. Add the chocolate chunks and mix together again.
  6. Evenly spread the mixture in the pan and bake for 18-22 minutes until golden brown on top. Let cool before cutting.
