Recipe Highlights

  • 5 ingredients: Sweet potatoes, olive oil, salt, pepper, and parmesan are all you need.
  • Crispy parmesan crust: Baking the potatoes face down directly onto the cheese is what makes the crust crackly and golden.
  • One pan: Everything bakes on a single parchment-lined sheet with minimal clean up.
  • Easy to scale: Double or triple the recipe as needed. For another easy side also try my Air Fryer Sweet Potato Wedges.

Notes From My Kitchen

I’ve been making these Parmesan Crusted Sweet Potatoes on repeat in my kitchen and they’ve earned a permanent spot in my side dish rotation. I’ve always loved roasting sweet potatoes low and slow until the edges caramelize, and this recipe takes that same idea and adds a crispy parmesan crust on top of it.

And the best part? They’re so simple to make! You sprinkle parmesan into little potato-shaped piles on a baking sheet, then place each potato half face down right on top. As it bakes, the cheese melts, crisps, and fuses right onto the cut side of the potato into a crust that’s savoury, salty and beyond crave worthy! My husband has requested that I only make sweet potatoes this way now. If you love parmesan my Cauliflower Parmesan is another family favourite side dish!

This is the kind of side that goes with everything. I’ll serve it next to roasted chicken on a weeknight, set it out alongside a bigger spread for company or stuff them with my Lentil Chili for a cozy meal.

Key Ingredients

Labeled ingredients for parmesan roasted sweet potatoes, including sweet potato, olive oil, salt and pepper, and parmesan cheese.
  • Sweet potatoes: Look for smaller potatoes with an even shape so they cook through at the same rate as the cheese crisps. Larger potatoes will need more time in the oven which can cause the cheese to burn. If you love sweet Potatoes also try my Lentil Sweet Potato Curry.
  • Parmesan cheese: Finely grated parmesan (not shredded) is important here, it melts into a more even, cohesive crust. Pre-shredded parmesan tends to be coarser and won’t crisp up the same way. Fresh parmesan is also delicious on my Creamy Tuscan Tortellini Soup.

Jess’s Tips

  • Use finely grated parmesan: Finely grated cheese melts together into a solid, even crust, while shredded parmesan tends to burn in spots before it fully melts. Parmesan is also delicious in my Marry Me Pasta recipe!
  • Don’t skip the parchment paper: The parmesan will stick to a bare baking sheet, so line it well for easy cleanup and an intact crust.
  • Check the cheese partway through: Ovens vary, so start checking around the 25 minute mark. The parmesan can go from golden to burnt quickly in the last few minutes.
  • Pick evenly sized potatoes: This helps everything finish cooking at the same time, so you’re not left with one underdone half and one overdone crust.
  • Don’t use large sweet potatoes: These will take too long too cook in the oven and the parmesan cheese will burn.
  • Don’t move them right away: Letting the potatoes sit in the pan for 10 minutes helps the parmesan crust set so it lifts off the pan in one piece instead of crumbling.

Description

These parmesan crusted sweet potatoes come out of the oven with a golden, crispy cheese crust and a soft, caramelized centre. They only need five ingredients and make the coziest side dish for a busy weeknight dinner.

Ingredients

Units
  • 2 small sweet potatoes
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup finely grated parmesan cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Wash the sweet potatoes and cut them in half lengthwise, trimming off the ends if they look rough.
  3. Rub each potato half with the olive oil, salt, and pepper.
  4. Line a baking sheet with parchment paper and sprinkle the parmesan into long piles shaped like each potato half.
  5. Place each potato half face down onto a pile of parmesan.
  6. Bake for 25 to 35 minutes, or until the potatoes are fork-tender and the cheese is deeply golden, checking as they cook since bigger potatoes may need more time and the cheese can burn if left too long.
  7. Let the potatoes cool in the pan for 10 minutes before touching.
  8. Optionally garnish with more parmesan cheese and parsley.

Notes

Storage

Store leftover potatoes in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer at 375°F for a few minutes to bring the parmesan crust back to life.

Tips

  • Use finely grated parmesan.
  • Don’t skip the parchment paper.
  • Start checking the potatoes around the 25 minute mark, since the parmesan can go from golden to burnt quickly.
  • Pick evenly sized potato halves so everything finishes cooking at the same time.
  • Avoid large sweet potatoes, since they’ll take too long to cook through and the parmesan will burn first.
