This Pomegranate Kombucha Mimosa is a festive drink that’s great to enjoy in the morning or evening. It’s made with kombucha for a healthy twist on a classic cocktail!

Because what better way to wrap up the year than with a refreshing cocktail that can be enjoyed on Christmas morning or New Years eve! (Or seriously, just any day of the week…which is how I’ve been enjoying this drink 😉 )
I’m not a huge drinker when it comes to cocktails and alcohol, but when it comes to kombucha? I could seriously drink it every day.
So what is kombucha exactly?
Kombucha is made from fermented tea! It has a small amount of alcohol in it from the fermentation process, and is usually lightly sweetened with some cane sugar. Because it’s a fermented drink, it has a lot of probiotics and can be beneficial for your gut health.
There are now a ton of different kombucha brands out there you can get. I personally like GT’s kombucha and health-ade kombucha. You may want to try out a few different brands to find one that you like best. Make sure to check to
For this recipe, I use the GT’s gingeraide kombucha, but you can use any type you like! Some other flavour that would compliment the recipe well are regular, cranberry or pomegranate.
You can even make your own homemade kombucha if you’re feeling adventurous! It’s a fun process, though keep in mind it will take a few days until your kombucha is ready.
Health Benefits of Kombucha
Kombucha is a 1-2 punch when it comes to health! This drink aids in detoxification (hello New Year’s Day) and because of the fermentation, it is loaded with live bacteria that are your gut’s best friend. I know it sounds gross, but these bacteria are good and coat your gut, so your digestion is seamless and they even improve your immune system, so no winter colds! These are the main benefits of Kombucha, but there are others such as arthritis and cholesterol reduction, along with cancer prevention.
A few notes on the recipe:
So this is a super simple recipe. (yay!) We start off with some kombucha that gets mixed with pomegranate juice and some fresh thyme. Pretty simple, right?
I like to pour all the ingredients together in a small pitcher and then divide them into glasses.
Make sure your ingredients are nice and cold before preparing the recipe and only prepare it right before serving so the drinks stay crisp and bubbly!
Serve these up along-side some pecan pie baked oatmeal or pumpkin spice chia pudding cups for the perfect holiday brunch!

Description
A perfect festive drink for the Holidays or New Year’s Eve!
Ingredients
- 3–4 sprigs of thyme
- 1 cup kombucha (I use ginger flavour)
- 1 cup champagne
- 1/2 cup pomegranate juice
Instructions
- Smack the thyme with your hands to release the aroma, then add it to a pitcher.
- Add the rest of the ingredients and mix together, then divide evenly into champagne glasses.
Notes
You can make this recipe more of a classic mimosa by using orange juice instead of pomegranate juice!
