These Pistachio Overnight Oats are creamy and nutty with a rich pistachio flavour that tastes like pistachio gelato. These overnight oats are high in protein, high in fibre and perfect for a meal-prep breakfast.

Overnight oats are one of my go-to breakfasts because they’re easy, filling, and customizable. I’ve tested dozens of overnight oat combinations over the years, from Tiramisu Overnight Oats to Snickers Overnight Oats, my overnight oats always go viral on the Choosing Chia Instagram for good reason. These Pistachio Overnight Oats are my latest obsession I’m adding to the rotation.
The combination of pistachio butter and Greek yogurt gives these oats a dessert-like taste while still being nourishing enough for breakfast. Everything mixes together in one bowl, sits in the fridge overnight, and is ready to grab in the morning. No cooking, no stress, and no soggy oats!

Key Ingredients

- Oats: You can use rolled oats or quick oats to make overnight oats. My preference is using rolled oats for a chewy texture.
- Protein powder: I love to add some whey protein powder to these oats to bump up the protein. You can leave this out and you’ll still end up with 16 grams of protein per serving.
- Pistachio butter: I use pure pistachio butter in this recipe. Pistachio spread works too, but tends to be loaded with sugar, so keep this in mind as it will impact the overall sweetness of the recipe.
- Chia seeds: I love chia seeds to make Protein Chia Pudding, but they are also great in overnight oats to help thicken them. You can leave them out if needed, just reduce the almond milk by 2 tablespoons if you do.

How To Make Pistachio Overnight Oats

Step 1: Add the oats, protein powder, pistachio butter, yogurt and chia seeds to a mixing bowl.

Step 2: Add the almond milk, maple syrup and vanilla extract.

Step 3: Mix until well combined.

Step 4: Place in the fridge overnight or for at least 4 hours.
Recipe Variations
- Higher protein: Add one scoop of vanilla or unflavoured protein powder like I add to these Protein Overnight Oats and an extra splash of almond milk.
- Dairy free: Use coconut or almond yogurt instead of Greek yogurt.
- Chocolate pistachio: Chocolate Overnight Oats are delicious on their own, but chocolate pistachio would be a great twist on the Dubai chocolate trend! Add a tablespoon of cocoa powder or a few dark chocolate chips to the mix.
How To Store
Store overnight oats in an airtight container in the fridge for up to 4 days. Stir before serving and add a splash of milk if the oats thicken too much.

- Mix thoroughly: Make sure the pistachio butter is fully incorporated so the flavour is evenly distributed.
- Adjust sweetness to taste: Start with 1 tablespoon of maple syrup and add more if needed. You can always add more before serving if needed.
- Use rolled oats: They hold their texture best after soaking. (Quick oats can get a bit soggy.)
- Add liquid as needed: Overnight oats can thicken as they sit, so don’t hesitate to add more milk in the morning if needed!
- Top just before serving: Add pistachios or some homemade chocolate granola in the morning so they stay crunchy.

Ingredients
- 1 cup rolled oats
- 1/4 cup whey protein powder (optional)
- 1 tablespoon chia seeds
- Pinch of salt
- 2 tablespoons pistachio butter
- 1/3 cup plain Greek yogurt
- 1 teaspoon vanilla extract
- 1 to 2 tablespoons maple syrup, to taste
- 1 cup unsweetened almond milk
- Chopped pistachios, for topping
Instructions
- Add the rolled oats, protein powder,chia seeds, salt, pistachio butter, Greek yogurt, vanilla, maple syrup, and almond milk to a bowl or jar.
- Stir well until the pistachio butter is fully mixed in and everything is evenly combined.
- Cover and refrigerate for at least 4 hours, or overnight, until the oats are thick and creamy.
- In the morning, give the oats a stir and add a splash of almond milk if needed.
- Optionally top with yogurt and chopped pistachios and serve.
