ingredients for date snickers
  • Medjool Dates: These big and juicy dates serve as the perfect natural sweetener and taste like caramel. You can use other varieties of dates, but medjool dates are best.
  • Peanut Butter: Creamy or crunchy, the choice is yours! Peanut butter adds a rich, nutty flavour and creamy texture to our indulgent treats. Substitute with any nut or seed butter like almond butter that I use for these Almond Butter Stuffed Dates.
  • Peanuts: Crushed peanuts provide a light crunch and an extra boost of nutty goodness. You can leave these out if you prefer no crunch.
  • Dark Chocolate: Melted dark chocolate coats our Date Snickers turning them into a “chocolate bar.” If you want a sweeter treat make them with milk chocolate.

Jess’s Tips

  • Use Medjool dates: Try and use medjool dates for this recipe rather than another type of date. These dates have a natural caramel-like flavour which works best for this recipe.
  • Choose Fresh Dates: Opt for plump and moist dates to ensure a soft and chewy texture in your Date Snickers.
  • Go Creamy or Crunchy: You can use creamy or crunchy peanut butter for the recipe. Use extra peanut butter in a batch of Chocolate Peanut Butter Chia Pudding.
  • Get Creative with Toppings: Experiment with different toppings such as crushed almonds, shredded coconut, cacao nibs, or white chocolate.
  • Use Quality Chocolate: Use high-quality 70% dark chocolate for a rich taste.
  • Chill Before Dipping: If your peanut butter is very runny, after stuffing the dates with peanut butter and peanuts, chill them in the freezer for 30 minutes to firm up before dipping in chocolate.
  • Work Quickly: Once dipped in chocolate, sprinkle the peanuts immediately before the chocolate sets.

Ingredients

Units
  • 10 medjool dates
  • 23 tbsp peanut butter
  • 23 tbsp crushed peanuts
  • 150g melted dark chocolate
  • Sea salt to top (optional)

Instructions

  1. Make a cut in each date with a knife and remove and discard the pits.

Notes

Use Medjool dates for the best caramel-like flavour.
Choose fresh, plump dates so the texture stays soft and chewy.
Creamy or crunchy peanut butter both work well.
Use good quality dark chocolate for the best flavour.
Chill the stuffed dates briefly if the peanut butter is runny.
Add toppings right after dipping so they stick before the chocolate sets.
