I honestly love it when I share a recipe on the Choosing Chia Instagram and takes on a life of its own. I posted these Key Lime Pie Overnight Oats to my stories a few weeks ago without thinking much of it, and my DMs immediately filled up with “WHAT IS THIS” and “I need this recipe now.” So here we are! The recipe is officially on the blog, and I’m so glad I finally had an excuse to write it up properly.

If you’re already a fan of my Strawberry Overnight Oats or my Banana Overnight Oats, you know I love fruity and fresh overnight oat flavours. This one is no different.

You mix everything together the night before, pop it in the fridge, and wake up to a delicious breakfast that tastes like dessert! The flavour is bright and citrusy, like a classic key lime pie, but in a jar. It’s one of those recipes that’s especially great in Spring and Summer when you want something fresh and light to start the day.

I love adding a tiny bit of matcha powder for a pretty green colour but it’s totally optional, but it does make for a beautiful jar.

  • Oats: Old-fashioned rolled oats are the best choice here. They absorb liquid well overnight and hold their texture without turning mushy. Quick oats will work in a pinch, but will be softer. I prefer to save my quick oats for warm oatmeal recipes like my Apple Pie Oatmeal.
  • Greek yogurt: Plain Greek yogurt is what gives these oats that creamy, tangy, pie-filling flavour. I like to use 2-5% for the creamiest result. For a dairy-free version, a thick coconut yogurt works well as a substitute.
  • Lime juice & zest: Let’s talk about key limes vs. regular limes. True key limes are smaller and slightly more floral in flavour than regular Persian limes, but they can be hard to find at a typical grocery store. The great news is that most key lime recipes like my Key Lime Chia Pudding or these overnight oats can be made with regular lime juice, and the result is still delicious.
  • Matcha powder: This is completely optional and doesn’t affect the flavour. Just a half teaspoon gives the oats a light green hue that looks beautiful in the jar. Leave it out if you don’t have it on hand. If you love matcha flavour you should definitely also try my Creamy Matcha Oatmeal.

How To Make Key Lime Pie Overnight Oats

Step 1: Add the oats, chia seeds, greek yogurt, lime zest and matcha powder to a mixing bowl or a jar.

Step 4: Cover and place in the fridge to set for at least 4 hours or overnight.

How To Store

Store your Key Lime Pie Overnight Oats in a sealed jar or airtight container in the refrigerator for up to 4 days. Keep the graham cracker topping separate and add it just before eating so it stays crispy rather than soggy.

Jess’s Tips

  • Don’t add the graham crackers until you’re ready to eat: Graham crackers will become soggy sitting on top of the overnight oats. Add them right before serving so they stay crunchy.
  • Use fresh lime juice, not bottled: It makes a real difference here. Bottled lime juice tends to taste flat so fresh is 100% worth it! Any extra limes are great to use in my Key Lime Pie Energy Balls.
  • Taste and adjust flavour: Everyone has a different sweet-tart preference. Give your oats a quick taste before placing in the fridge add a little more maple syrup or an extra squeeze of lime to get it exactly where you like it.
  • Add Matcha for colour: Half a teaspoon of matcha powder gives these oats the prettiest green colour which makes them look even more like the real thing. It doesn’t add a noticeable matcha flavour so even if you’re not a matcha fan, you can use it purely for the aesthetic. (If you are a matcha fan, definitely give these Matcha Overnight Oats a try.)
  • Meal prep a full week: This recipe makes 2 servings, but it doubles and triples easily. Make a big batch on Sunday and you’ve got breakfast sorted for the week!

Can I eat Key Lime Pie Overnight Oats warm?

Yes, if that’s your preference. Warm them gently in the microwave for 60 to 90 seconds and stir well before eating. That said, I personally think these taste best cold, since the creamy, chilled texture is part of what makes them feel like pie!

Can I make this Key Lime Overnight Oats recipe vegan?

Yes! Swap the Greek yogurt for a thick coconut yogurt or full-fat coconut cream, and use a plant-based milk of your choice.

Ingredients

  • 1 tablespoon chia seeds
  • 1 tablespoon key lime zest (or lime zest)
  • 1/2 teaspoon matcha powder (optional, for color)
  • 1/3 cup plain Greek yogurt
  • 3 tablespoons key lime juice (or lime juice)
  • 1 cup almond milk
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • extra Greek yogurt, for topping
  • crushed graham crackers, for topping

Instructions

  1. Add the oats, chia seeds, lime zest, matcha powder (if using), Greek yogurt, lime juice, almond milk, maple syrup, and vanilla extract to a bowl or jar.
  2. Stir until everything is well combined.
  3. Cover and refrigerate overnight, or for at least 4 hours.
  4. In the morning, stir the oats and top with extra Greek yogurt and crushed graham crackers before serving.

Notes

Add graham crackers right before serving so they stay crunchy.
Use fresh lime juice not bottled for the best flavour.
